Monascus Color-special for LTMP

Monascus color is mainly made of rice. Through deep liquid fermentation or solid fermentation of monascus, the red yeast rice is made. Extracted from the monascus, the monascus color of powdery natural edible colorant is made.

Monascus color of different properties will be made by different fermentation methods. Water-soluble monascus color and alcohol-soluble monascus color made by old processes have been eliminated. At present, the monascus color made by new processes are both water-soluble and alcohol-soluble.

When the PH value is more than four, most of monascus color is susceptible to precipitation.
The monascus is easy to produce carcinogenic citrinin, so production conditions must be strictly controlled
Monascus color has natural color tone. Due to color fading under illumination, the monascus color cannot replace synthetic colorant in some application areas.

It can be widely used in the coloring of meat product, condiment, beverage, wine, jelly, cake, candy and other food. It serves as an ideal substitute of chemical synthetic colorant.
